My family says the Wegmans Orrecchiette pasta reminds them of potatoes. The pasta isn't as thick as gnocchi but it definitely has "bite" that stands up to the rich beef flavor of this dish.- 1lb beef round tip or sirloin tip thinly sliced on the diagonal
- 1 large onion, cut in half and sliced
- 1 large clove of garlic, finely chopped or pressed
- 1/4 cup dry white wine or vermouth
- pinch of thyme
- salt and pepper to taste
- 2 cans of condensed mushroom soup
- 1 large box of mushrooms, I prefer crimmini, whole if small or quartered if large
- splash of wine wine or vermouth
Saute the onion in the pan. When the onion softens, add the garlic and continue cooking until the garlic softens. Pour the white wine over the vegetable mixture and stir to loosen up the browned bits on the bottom of the pan. Add the onions mixture to the crock pot.
Add the thyme and onion soup mixture to the crock pot. Stir the mixture well to combine
Set the crock pot to your desired time setting. NOTE OF CAUTION: if you set the crock pot to 8 hours or longer you will need to add a cup of water to the mixture to ensure the sauce doesn't thicken too much.
20 minutes before serving, cook the orrecchiette pasta in salted boiling water until al dente. While the pasta cooks saute the sliced mushrooms in olive oil until softened. Deglaze the pan with a space of white wine and cook to desired softness. Poor the mushroom and wine mixture over the beef mixture.
Serve the saucy beef over the pasta.

ReplyDeleteBalsalmic Chicken (crock-pot)
4-6 chicken breasts (frozen or unfrozen works great)
2 14.5 ounce cans petite diced tomatoes
4 cloves garlic
onion - thinly sliced (not chopped)
1/2 cup balsalmic vinegar
2T olive oil
1 tsp each - basil, rosemary and oregano
1/2 tsp thyme (I've used just the italian seasoning in exchange for all 4 dried herbs- about 3/12 tsp)
salt and pepper
Pour olive oil on bottom of crock pot. Place chicken on top. Salt and pepper each breast. Top with sliced onions, garlic and dried herbs. Pour in vinegar and top with diced tomatoes.
Cook on high 4 hours (or longer for frozen chicken)
Serve over angel hair pasta and top with fresh parmesean.
